Dining in Vegas Should be a “Wynn-Win”!

There are simply no words or adjectives grand enough to
describe the outstanding restaurant Wing Lei, located at the Wynn
Hotel and Casino. After just one dining experience, Wing Lei has
become one of my all time favorite Las Vegas restaurants. That is
saying a lot!
With its gorgeous, plush and rich decor,
elegant yet comfortable atmosphere, impeccable service and the
finest food Las Vegas offers, Wing Lei is a “must” in fine dining
experiences! All of this excellence is skillfully run by the
graceful but watchful eye of general manager Lianne Shih.
With its brilliant Chinese cuisine, the dishes are
remarkably creative and original, thanks to the incomparable chef
Chen. He began his career at the age of seven, working in his
parents’ restaurant in his native Taiwan. The chef’s own
uncompromisingly high standards of excellence have propelled the
restaurant to sterling reviews. His “reverse fusion” style-cuisine
that artfully uses Western ingredients and techniques in preparing
traditional Chinese classics has accomplished the Wynn Hotel’s goal
in outstanding, gourmet, high-end Chinese cuisine it had envisioned
for this restaurant.
Upscale Chinese food is
just starting to make its mark in the fine dining arena. On Wing
Lei’s menu, guests will find their favorite Chinese selections, in
addition to new, innovative pairings of Eastern and Western
ingredients.
Furthermore, designer Jacques Garcia was
careful to attend to every flawless detail; from the bar with an
amazingly romantic ambience to the intimate plush main dining room
with numerous ancient Chinese motifs such as the dragon and flaming
pearl.
Perhaps the restaurant’s most timeless accessory is a
rare and original Botero sculpture of a nude woman gracefully set
between 100-year-old pomegranate trees that have been planted
directly outside the enormous picture window comprising one entire
wall of the dining room. STUNNING!
In addition, celebrity
watchers, you never know who you might spot dining at this
enchanting restaurant, so look around you. I was fortunate enough to
see Michael Jackson (he looked amazing) and his three beautiful
children (and two bodyguards) enter into one of Wing Lei’s private
dining rooms. How can you top that?
Well you can, the moment
you taste one morsel of Chen’s masterful creations.
Allow me
to share with you some of my suggestions, along with those offered
by my handsome server Peter Yau. Start your dream dinner with the
succulent traditional Peking Duck Salad appetizer, given an
interesting twist when prepared with mesclun lettuce, slivered
almonds and truffle vinaigrette. Traditionalists will embrace
classics such as the Pan Grilled Pot Stickers, Honey-Glazed BBQ
Spare Ribs and Chicken Wonton Soup. I suggest every one of them.
Entrées at Wing Lei are divided into several categories
including seafood, poultry, beef, pork and lamb. Chef Chen’s
artistic integrated approach to Chinese cuisine is again
demonstrated in dishes that fuse traditionally Asian ingredients
with European techniques and flavors. Classic seafood selections
include tangy Szechwan Chili Prawns, and Wok-Fried Cantonese Maine
Lobster with bok choy, winter bamboo. Go ahead and be a little
adventurous and enjoy the Alaska Geoduck Clams served sashimi-style,
Santa Barbara Spotted Prawns prepared like sashimi, or the gorgeous
Australian Spiny Lobster sure to satisfy any palate. If you love
chicken, you could not be in finer hands than in chef Chen’s!
Classics such as Kung Pao Chicken are especially yummy, and the
pairing of roasted peanuts, bell peppers and scallions, especially
delectable.
My number one suggestion, however, is the
Imperial Peking Duck…a true, rare delicacy cooked to a crispy
perfection and served with a spectacular presentation! (They split
this dish and serve it first as an appetizer table-side with
mandarin pancakes then later as your entree)! You will forever
remember this dish!
For a variety, chef Richard Chen also
offers guests another option with a tasting menu. Have no fears, as
every item on the menu is the best you will find anywhere, so have a
ball ordering. Dining at Wing Lei is like an adventure, a party, a
happening with all its tastes, textures and well executed flavors.
Simply put, “A joy in dining!”
For desserts, get them all!
Your mouth will feel as though it has arrived in heaven! They were
not only unbelievable to the taste, but the presentations were
gorgeous!

Corsa Cucina & Bar
Corsa Cucina & Bar, at the Wynn Hotel & Casino, is a
lively, chic, warm, cozy, and modern Italian eatery located at the
cornerstone of Wynn’s “theater row,” with quite an enticing menu by
critically acclaimed and celebrated chef Stephen Kalt (Spartina in
New York City). Chef Kalt offers the flavors of fine Italian food in
a comfortable and hip setting that is airy (with an open kitchen),
theatrical, and above all, welcoming.
Corsa’s extensive and well
thought out menu is the reflection and genius of Chef Kalt’s
creativity and skills of modern Italian cuisine. The chef designed
this menu with an array of dishes for every taste and craving. As
Kalt expressed, Corsa is “a place where you can find both the exotic
and the familiar, traditional and contemporary. The cuisine offers a
global modern Italian focus with dishes that are inspired by
countries such as Italy, Greece, Morocco and Spain for truly
universal appeal.”
You will find the service at Corsa warm
and friendly, as was my outstanding, helpful, fun server Corey
Geter!
Corsa Cucina & Bar is outfitted with a
wood-burning pizza oven, used to good effect in creating a wide
variety of Chef Kalt’s signature pizzettes (pizzas). These pizzettes
are perfect as a tempting starter or bar snack. The dishes, I must
say, are decadent. Allow me to give you some suggestions.
To
start (well, after the pizzette), indulge in the perfectly executed
angel hair pasta salad or devour the delicate chicken liver
crostini. The manila clams casserole is also a delight.
For your entrée, I cannot recommend highly enough the
out-of-this-world Lobster and Maya Shrimp “Fra Diavolo” composed of
spaghetti, chile oil, and roasted plum. Also sinful is the tomatoes
and extra virgin olive oil and Short Rib of Beef Ragu with mezza
rigatoni, cooked Piedmontese style, tossed with savory parmigiano
reggiano.
Another must-try selection is Chef Kalt’s
signature Lasagne Bolognese, a mouthwatering salute to comfort food
and features handmade pasta, layered with savory veal and plum
tomato sauce and fresh whole milk ricotta. Another signature dish is
the Ravioli filled with Veal Osso Bucco. So wonderful!
Other
entrées that span the globe are the Roasted Organic Sonoma Chicken
with preserved lemon and garlic, and the light Roasted Monkfish in
Parchment. The Filet Tenderloin of beef is also wonderful.
For those of you that desire more traditional cuisine, you
can enjoy the traditional Baked Eggplant Parmigiano or the Chicken
Breast Milanese.
Desserts at Corsa Cucina are the cherry on
top of an already perfect cake…Pun intended! Order the to-die-for
Coco Bombolino, handmade doughnuts filled with chocolate pastry
cream, served with caramel and chocolate chip gelato; or perhaps you
might desire the Crepes with blueberry sorbet or the Tiramisu made
the old-fashioned way! Worth the calories, ladies!
